What You’ll Need:

  • 750ml whole milk
  • 3 bay leaves
  • 1 large cauliflower, cut into pieces (yes, leaves too!)
  • 75g butter
  • 75g plain flour
  • 75ml double cream
  • A little nutmeg
  • 2 tsp Dijon mustard
  • 75g Parmesan (or your favorite cheese)
  • 50g brioche, cubed (tiny crunchy cubes!)

How to Make It:

  1. Infuse the milk: Heat up the milk with bay leaves and let it infuse for 10 minutes. Meanwhile, cook the cauliflower for a couple of minutes until just tender. Drain.
  2. Creamy sauce time: In the same pan, melt butter, stir in the flour, and cook for a minute. Slowly add the warm milk, whisking until smooth. Stir in the cream, nutmeg, mustard, and half the cheese. Season to taste.
  3. Assemble & bake: Preheat your oven to 200°C. Arrange the cauliflower in a dish and pour that creamy sauce all over. Sprinkle the brioche cubes and the rest of the cheese on top.
  4. Bake: Pop it in the oven for 25-30 minutes until golden and crispy.
