Ingredients:
Cake Batter:
- 3 eggs
- 100g granulated sugar
- 8g vanilla sugar
- 100ml milk
- 75g butter, melted
- 65ml sunflower oil
- 175g flour
- 10g baking powder
Filling:
- 400ml milk
- 75g granulated sugar
- 8g vanilla sugar
- 50g cornstarch
- 150ml heavy cream
- 100g white chocolate
- 40g grated coconut
Milk Mixture:
- 250ml milk
- 75g granulated sugar
Garnish:
- Grated coconut
- Fresh strawberries
- Coconut balls (optional)
Directions:
- Make the Cake Batter:
- Beat the eggs with sugar and vanilla until smooth. Add melted butter, milk, and oil, then stir in flour and baking powder. Pour half the batter into a baking dish and bake at 175°C for 10 minutes.
- Prepare the Filling:
- Heat milk, sugar, vanilla, and cornstarch in a pan, stirring constantly until thickened. Add cream and white chocolate, stirring until melted, then mix in grated coconut.
- Assemble the Cake:
- Spread half of the coconut filling over the partially baked cake. Pour the remaining cake batter on top and bake for 30 minutes.
- Soak the Cake:
- Bring milk and sugar to a boil and pour over the cake. Let it soak and cool completely.
- Finish and Garnish:
- Spread the remaining coconut filling on top, sprinkle with grated coconut, and garnish with fresh strawberries and coconut balls.
