Ingredients:
For the Cream:
- 200g mascarpone
- 16g whipping cream stabilizer (2 tbsp, Klopfix)
- 8g vanilla sugar (1 sachet)
- 40g granulated sugar
- 300ml heavy cream
For the Base:
- Ladyfingers (cut into smaller pieces)
- Biscoff cookies
For the Topping:
- 125g Biscoff spread (melted)
- Fresh strawberries (for garnish)
- Biscoff cookie crumbs
Instructions:
- Prepare the Cream:
- In a deep bowl, combine mascarpone, whipping cream stabilizer, vanilla sugar, and granulated sugar. Mix for 1 minute.
- Gradually add the heavy cream while mixing until stiff peaks form.
- Assemble the Base:
- Cut ladyfingers into smaller pieces. Line a baking ring or mold with plastic wrap and place it on a plate.
- Line the sides of the ring with ladyfingers, covering the bottom with smaller pieces.
- Layer the Dessert:
- Pipe a layer of the prepared cream onto the ladyfinger base.
- Add a layer of Biscoff spread over the cream.
- Sprinkle some Biscoff cookie crumbs, followed by another layer of cream. Make sure to leave room at the top for the Biscoff topping.
- Chill:
- Refrigerate the desserts for at least 4-5 hours, or preferably overnight, to set.
- Top with Biscoff Spread:
- Heat the Biscoff spread until it becomes liquid, either by using a saucepan over low heat or microwaving briefly.
- Pipe a thin layer of the melted Biscoff spread over each dessert.
- Garnish:
- Garnish the desserts with halved strawberries and additional Biscoff cookie crumbs.
