Looking for a simple yet flavorful chicken recipe? These oven-baked chicken leg quarters, seasoned with a smoky blend of paprika, garlic, and spices, are crispy on the outside and juicy on the inside. Perfect for a cozy dinner or meal prep for the week! 🧄🌿
Ingredients:
- 2 teaspoons smoked paprika
- 2 teaspoons granulated garlic
- ½ teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 5 (8 ounce) chicken leg quarters
- ⅓ cup melted unsalted butter
Instructions:
- Preheat the Oven:
- Preheat your oven to 425°F (218°C). Line a sheet pan with aluminum foil.
- Mix the Spices:
- In a small bowl, stir together smoked paprika, granulated garlic, onion powder, salt, and black pepper.
- Season the Chicken:
- Pat chicken leg quarters dry with paper towels. Lift the skin gently and sprinkle 1/4 to 1/2 teaspoon of the seasoning blend under the skin. Brush both sides of each leg quarter with melted butter.
- Sprinkle the remaining spice mixture on both sides of the chicken quarters.
- Bake the Chicken:
- Place the chicken quarters cut side up on the prepared sheet pan. Bake for 20 minutes, then turn the quarters cut side down and continue baking until the chicken reaches an internal temperature of 160°F (71°C), about 20 more minutes.
- Broil for Crispy Skin:
- Turn on the broiler and broil each side for 3-4 minutes to get that perfect crispy skin. Ensure the internal temperature reaches 165°F (74°C).
- Rest and Serve:
- Let the chicken rest for 5 minutes, tented with foil, before serving. Enjoy!
