Ingredients

For the Marinade:

  • 325g yellow onion, coarsely chopped
  • 1 garlic clove
  • 15g fresh parsley
  • 6g turmeric
  • 5g ginger powder

  • 3g onion powder
  • 3g black pepper
  • 10g salt
  • Saffron threads
  • 50ml water
  • 25ml olive oil

For the Chicken:

  • 950g whole chicken, cleaned (use vinegar or lemon)
  • 125g yellow onion, chopped
  • 15g coriander, chopped
  • 50ml olive oil
  • 700ml water
  • 30g butter
  • Green olives, for garnish
  • Roasted almonds, for garnish

For the Fries:

  • 600g potatoes, peeled and cut into fries
  • Salt (to taste)

Step-by-Step Instructions

1. Prepare the Marinade

  • In a food chopper, finely blend the yellow onion, garlic, and parsley.
  • Transfer to a deep bowl and mix in turmeric, ginger powder, garlic powder, onion powder, black pepper, salt, saffron, water, and olive oil.

2. Marinate the Chicken

  • Clean the whole chicken thoroughly, removing any remaining hairs by singeing if necessary.
  • Rub the chicken all over with the marinade. Let it rest for at least 2 hours (preferably overnight) for deeper flavor.
  • Tie the legs with string to maintain its shape while cooking.

3. Cook the Chicken

  • In a large pan, heat 50ml of olive oil. Add the marinated chicken along with the remaining vegetable mixture.
  • Stir in the chopped onion and coriander, then pour in 700ml of water.
