Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups elbow macaroni, cooked and drained
  • 2 cups shredded cheddar cheese

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Cook the Beef Mixture:
    • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat. Add chopped onion, bell pepper, and garlic, cooking until softened. Stir in diced tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 10 minutes.
  3. Mix with Macaroni:
    • Combine the cooked macaroni with the beef mixture. Stir until everything is well mixed.
  4. Assemble the Casserole:
    • In a greased 9×13-inch baking dish, layer half of the macaroni and beef mixture. Sprinkle 1 cup of shredded cheddar cheese on top. Add the remaining mixture and finish with the remaining 1 cup of cheese.
  5. Bake:
    • Bake in the preheated oven for 25 to 30 minutes until the cheese is melted and bubbly. Serve hot and enjoy!
