Ingredients
Fish Mixture:
- 250 g cod
- 250 g wolffish
- 3 g salt
- 3 g ras el hanout
- 5 g fresh parsley, chopped
- 15 ml olive oil
Sauce:
- 50 ml olive oil
- 400 g tomatoes, diced
- 150 g yellow onion, chopped
- 125 g red sweet pepper, chopped
- 75 g green bell pepper, chopped
- 25 g fresh parsley, chopped
- 150 ml water
- 30 g tomato paste
- 4 g garlic powder
- 2 g red bell pepper powder
- 2 g cumin powder
- 2 g cayenne pepper powder
Directions
- Prepare the Fish Mixture:
- In a large bowl, mix together the cod, wolffish, salt, ras el hanout, parsley, and olive oil. Form small fish balls by rolling portions of the mixture in your hands. Set aside.
- Make the Sauce:
- Heat the olive oil in a large pan over medium heat. Add the onions, red sweet pepper, and green bell pepper, cooking until they soften.
- Add the diced tomatoes and let them cook until the liquid starts to reduce, about 5 minutes.
- Stir in the tomato paste, garlic powder, red bell pepper powder, cumin, and cayenne pepper powder. Mix everything well.
- Cook the Fish Balls:
- Add the fish balls gently into the sauce. Pour in the water and cover the pan. Let the fish simmer in the sauce for about 10-15 minutes, or until they are cooked through and the sauce has thickened.
- Finish and Garnish:
- Stir in the chopped parsley and adjust the seasoning if needed. Serve hot, garnished with fresh parsley and a slice of lemon for added zest.
